
I started my weekend with a trip to the gym, primarily focusing mostly on my shoulders. I gave it a good go and worked them until failure— I’m certain I’ll feel it tomorrow. Anyhow, after my workout, I felt that this lunch was not just necessary, but it was also the only thing I had the energy to put together.
I know one of the complaints of those who don’t relish cooking is that it often takes time to eat than it does to cook, which normally, I don’t mind. But in times like today, where I can barely muster up the energy to walk home from the gym, let alone make myself a meal, I need to forgo cooking and resort to assembling my meals instead.
It can be very satisfying to open a few packages and have a meal in minutes, especially if you’ve made some component of your meal ahead of time. For this meal I employed the help of the Triple Herb Tzatziki that I made last night, which has a wonderful creamy coolness about it. Simple assembly of a few additional ingredients made for a rapid, throw-together meal.
Smoked Salmon & Tzatziki Discs
Serves 1

Ingredients
2 corn or rice cakes
½ cup salad mix
2 ounces smoked salmon
2-4 tablespoons Triple Herb Tzatziki
Lemon
Sea salt
Instructions
Spread the tzatziki evenly between the corn cakes. Then, divide the salad and smoked salmon layer onto the tzatziki. Sprinkle a pinch of sea salt between the two cakes and serve with lemon.
