I knew that the task of taking on a project, like #The100DayProject, which encourages everyone to create, make and share their creations on Instagram for 10o consecutive days, was going to have its challenges. But, who knew I’d meet these challenges so early on? Today is only day four of my project, #100DaysofSalad, and like yesterday, I am finding myself against the clock to post to Instagram; both nights posting moments before midnight. Thankfully, these days are few are far between and I know I’ll be back on track in no time — posting harmony restored.
Thankfully, salads like this one are a breeze to put together — perfect for a lazy Friday night.
Cucumber Salad with Cilantro
1 hothouse cucumber, halved, seeded and sliced into large slices
1/2 small red onion, thinly sliced, about 1/4 cup
1/2 Thai red chili, minced, optional
2 tablespoons white wine vinegar
2 teaspoons sugar
1/2 lime, juiced, about 1 tablespoon
1/4 teaspoon sea salt
Place the onion, chili, white wine vinegar, sugar and 1/4 teaspoon sea salt to a medium-sized bowl. Set the onion mixture aside for about 20 minutes.
After 20 minutes, add the cucumber to the dressing. Toss and serve immediately.
