
Today marks day 10 of my #100daysofsalad project where I’m making and sharing 100 different salads for 100 consecutive days. I couldn’t be anymore excited to share this recipe with you. Not only are preparations for this salad child’s play, since you don’t even need a knife, but it tastes fantastic! Something about the sweet creaminess of the peas goes so perfectly with the sharp saltiness of the feta. The cooling taste of the fresh mint will lift your spirits and tastes like the air in spring.
Pea, Mint & Feta Salad
Serves 1

Ingredients
1 cup frozen peas
1 small handful fresh baby spinach, washed and dried
10-15 fresh mint leaves, washed and dried, torn into smaller pieces if you wish
2 tablespoons feta cheese, in large crumbles
1 tablespoons really good olive oil
1 lemon zested into strips, optional
1 tablespoon lemon juice
1/4 teaspoon flaked sea salt
Instructions
Blanche the peas in a small pot of boiling water for about 10 seconds, just until they are bright green. Then, immediately drain the water and rinse the peas in cold water to stop the cooking. Once the peas have cooled drain the water and tumble the peas into a shallow bowl.
To the bowl add the spinach, feta, mint, olive oil, sea salt, lemon zest and lemon juice. Give the salad a toss. Sprinkle with additional sea salt or feta, if you wish, and enjoy.
