
I recently bought some really beautiful salmon filets from my local farmers market. Salmon is rich in vitamins A, D and B12. It’s also a good source of protein and omega-3’s, which can help reduce bad cholesterol. In deciding on how to prepare them, I happened to be on Facebook and noticed that my cousin, Renatta, had posted a mouth-watering picture of a honey-glazed salmon that she prepared. Inspired by her photo, I decided to follow her lead and added a bit of cayenne for a spicy kick to these beautiful, coral-hued, filets. This is a quick recipe that bakes in about 12 minutes, which gives you just enough time to prepare a side salad or perhaps even Asparagus Fettuccine with a Light Parmesan Sauce.
Baked Spicy Honey-Glazed Salmon
Serves 2

Ingredients
- 2 salmon filets, about 4-5 ounces each
- 3 tablespoons honey
- ¼ – ½ teaspoon cayenne pepper
- ¼ teaspoon salt, plus extra for seasoning the salmon
- pinch of fresh ground black pepper, plus extra for seasoning the salmon
Instructions
Begin by preheating your oven to 425° F/ 220°C.
Using a paper towel, pat the salmon filets dry. Then, season the salmon filets with salt and pepper, and place them on a sheet tray lined with parchment. Alternatively, you can lightly grease your sheet tray to prevent the salmon filets from sticking. Next, in a small mixing bowl, whisk together the honey, cayenne, salt and pepper. Pour the honey mixture evenly over the filets, and bake the filets in the center rack of the over for 10-12 minutes. Remove from the oven, and serve warm.
