Baked Brie & Mango Chutney

Baked Brie & Mango Chutney is on of my favorite appetizers to serve to guests. Not only because it tastes so good, but also because it requires very little effort on my part. Every time I serve it, people love it. I most recently served it along with crostini to a friend who visited us for dinner. But, I could easily see it as part of a meal, served with a fresh baguette and a big, healthy salad. It’s like molten cheesy lava oozing beneath the bubbling sweet and spicy chutney .

Brie & Mango Chutney

Appetizer, serves 4

Ingredients

  • 8 ounce wheel or wedge of Brie
  • ¾ cup spicy mango chutney
  • ¼ cup cashews, roughly chopped
  • 1 tablespoon chives, to garnish, optional

 

Instructions

Preheat your oven to 375 degrees. Place the Brie onto a size-appropriate, oven-safe baking dish that you can also serve in. Next, pour the chutney onto the Brie, and top with the cashews. Bake the Brie until soft, but not runny – about 8-12 minutes. Remove from oven, and garnish with chives. Serve with crostini, crackers or a piece of a French baguette.
