
Tangy and creamy— this salad dressing is a fantastic way of dividing an avocado into four, and possibly even 6, portions. I served this along side the Chunky Cilantro Hummus I made for a quick, easy and flavorful meal. It would also go fantastically drizzled on top of tacos and in burritos. Come to think of it, this might even be glorious as a dressing for a potato salad. —The possibilities abound!
Avocado Lime Dressing

Ingredients
1 ripe Haas avocado, large diced
juice of a lime
2 tablespoons fresh cilantro, roughly chopped
½ cup olive oil
scant ½ teaspoon sea salt
¼ teaspoon fresh ground black pepper
Instructions
Place all of the ingredients into a mixing cup or narrow pitcher. Using an immersion blender, blend the ingredients until thick and creamy.
